Wednesday Cooking Time: Veg Fritters


Fritters in my kitchen. Yum!

The nice thing about this meal is that you can switch it up anyway you like. Add different veg – I like sweet potato and parsnip – for a mix of flavours and textures.

1 onion
3 carrots
2 medium size Potatoes
6 Eggs
3 Tbs plain flour
oil for frying
salt & pepper for seasoning

Makes 6-10 Large fritters

Grate the carrots, potatoes and onion together in a bowl. season with salt and pepper

Add the egg and flour into the mixture and mix well.

Shape into disks about 2cm thick

Fry in a little oil until golden brown.   

Add chilli, herbs, or spices to change up the recipe. You can customise these fritters an almost limitless number of ways!
